As the Tiger Fishing capital of Kwazulu Natal (if not South Africa), here is a handy Tiger Fish Soup Recipe for when you catch your next Tiger fish.

Tiger Fish Soup,
A rich soup of Smoked Tigerfish and Tomato finished with a light lemon oil and micro green salad

 

Ingredients

  • 1cup Sundried Tomato (Chopped)
  • 1kg Tomatoes (quartered)
  • 500g  Tiger Fish (smoked, deboned and filleted)
  • 2tbsp Olive Oil
  • 1/3cupBasil (Chopped)
  • 1/3cup Mint (Chopped)
  • 550ml Vegetable Stock
  • 4no Garlic Cloves
  • 2no Potatoes (Thinly sliced)
  • 2no Onions (Chopped)
  • 1tot Dry sherry
  • Salt and Pepper to taste

 

 

 

 

 

Method of preparation

  1. Combine tigerfish, tomatoes, olive oil and onions and roast in a pre heated oven at 200°c for 30-40min or until ingredients are lightly browned.
  2. Simmer potatoes in salted water till soft and then strain from liquid.
  3. In a saucepan add roasted mixture with garlic, sun dried tomatoes, potatoes and stock and bring to a boil.
  4. Simmer covered for approx. 30min and maybe adding a little more stock.
  5. Remove from the heat and add basil and mint and place in a food processor and process till smooth.
  6. Correct seasoning and serve with lemon oil. Micro greens and crusty bread.
